Despite the oppressive heat in Austin and the fog of lethargy it creates, we've managed to come up with one good thing: Homemade salsa.

It seems obvious now (like most good things once you do them) - but, better late than never. It's cheap, you can make it to your taste, and it's easy.

Lazy, Easy Salsa
1 can of diced roasted tomatoes
Juice from about 3 limes
1/2 medium onion, diced
Handful of cilantro
Salt
A few shakes of roasted red pepper flakes

I'm amazed how sweet canned tomatoes are, which is why you need a lot of lime juice. We usually blend ours just long enough to get it the right texture.
